Roasted Green Beans

Sadly, the deliciousness of the Roasted Green Beans I made last night has no porn to go with it. I cannot find my camera.

But they were delicious!

I'm always trying to find new things to do with greens because my husband dislikes them. (The funny thing is, he just dislikes them on principle. Generally, he thinks they taste pretty good. Boys are WEIRD!)

So, to go with the fish I made last night (Broiled talapia slathered in olive oil and fresh thyme and Dill), I roasted up the green beans I'd purchased with our last shopping trip. It was super easy and they turned out SUPER TASTEY!

I just put them on the pan, doused them with a very liberal amount of olive oil, kosher salt and fresh ground black pepper, and put them in a 400F oven for 20 minutes (turning them after 10).

Now, they didn't look so great, being kind of green/brown and very shriveled looking, but they tasted amazing! Nice and salty to compliment the herbalicious fish and the lemon-drizzled jasmine rice.

All in all, a fantastic meal!
