I find baking so relaxing. It's been a stressful week at work, and I may or may not have gone a little overboard this weekend attempting to "relax".
...I'm not sure how my boyfriend and I are going to eat five dozen cookies, but I guess we'll just have to manage.

Chocolate Chip Cookies
1 & 2/3 cups flour
1/2 tsp baking soda
1/2 tsp salt
3/4 cup butter, softened (I just melt the butter and sugars together in the microwave)
1 cup packed brown sugar
1/2 cup white sugar
2 & 1/2 tbsp vanilla (I love vanilla, you can tone this down if you want)
1 egg
1 tbsp white vinegar (do not question my methods)
1 cup + 1 handful chocolate chips
Preheat oven to 300F or 325F, depending on how hot your oven runs (mine runs hot, I left it at 300F)
Sift together flour, baking soda and salt. Set aside for now.
In a medium/large bowl, cream together the butter, brown sugar and white sugar until well blended. In a small bowl, beat together the egg, vinegar, and vanilla until nice and bubbly. Add to the butter & sugar mixture and beat until well blended.
Mix in the dry ingredients and stir in the chocolate chips. At this point you may need to stick the bowl in the fridge for 15 minutes or so until the texture is "right", especially if you were lazy and melted the butter and sugars together in the microwave. Drop by tablespoon onto cookie sheets and bake in preheated oven until edges are nicely browned and middles of cookies look just done (about 8 minutes). Cool on wire racks. Cookies are best the next day.
Peanut Butter Cookies
my boss gave me this recipe when she heard I use baking as a form of therapy
3/4 c peanut butter
1/2 c butter or margarine, softened
1/2 c brown sugar, firmly packed
1/2 c granulated white sugar
1 large egg
1/2 tsp vanilla
1 1/2 cups all-purpose flour
3/4 tsp baking soda
1/4 tsp salt
granulated sugar for tops of cookies
In medium mixing bowl beat together peanut butter, butter, brown sugar, 1/2 cup granulated sugar, egg and vanilla until creamy. Blend in flour, soda and salt, then cover & refrigerate at least 1 hour (my boss never does this step & I usually get impatient after 30 minutes). Form dough into 24 balls, each about 2-inches in diameter, and arrange about 2-inches apart on two cookie sheets.
Flatten cookies with fork dipped in granulated sugar to form criss-cross pattern & bake in preheated 350°F oven for 10-12 minutes or until light golden brown.
