I bought some peaches at the farmer's market this week. They're basically the last of the Texas peaches, and I want to make a peach pie with them for Labor Day. However, I don't have quite enough fruit for the filling, so I was thinking of mixing in another sort of fruit to make up for it. At first I was thinking peach-raspberry. The flavors would contrast nicely and it would be really pretty, but then I started wondering what else might taste great and started drawing a blank. Currants would be nice, but they wouldn't add enough volume to make up for what I'm missing in peaches.
I just wanted to see if y'all had any better ideas than raspberries. I promise to share some porn once the pie is actually made! ^_^ Just to give you an idea of what other flavors will be in play, the main course will be brisket with some sweeter beans, cole slaw, and some sort of veggie. Someone else is bringing homemade watermelon sherbet. We're also making mango salsa and spiced sweet potato fries for the occasion.
