this is the recipe for chilled avocado soup (vegetarian!) i've been using for forever now. it's bizarrely delicious, simple, and refreshing. i demand you all make it. ...that's an order!
2 medium avocados
1 1/2 cups water
1 cup milk
2 tablespoons lemon juice
salt, to taste
1 medium tomato, seeded and chopped
1 dash hot sauce (or depending on your own taste. i use mexican hot sauce; it just feels.. right..)
1. cut the avocado meat into pieces (fourths or whatever) and push meat through a sieve, into your mixing bowl.
2. whisk in water, milk, and lemon juice until smooth and well-combined.
3. season the soup with salt and red pepper, to taste.
4. sprinkle on the chopped tomato, chill, then serve.
tada!
you can top with thin lemon slices like i did in the picture, but i generally just make this for myself everyday after classes in this hot hot hellhole of the south, and i skip all the fanciness. there's a bunch of variations you can explore.. i've made it in a food processor a few times, and the texture is like butter soup, but it always tastes a little different. i'm not sure if it's just me, that i'm crazy, or if it was those specific avocados, or if it really does change something. anyway, cilantro's good, too, i just prefer the strict, simple recipe, for some reason.
oh, and it's vegan if you use soy milk, of course. even though i'm not even vegetarian anymore, that's the only milk i keep around the house, and it tastes great. now i'm starving. fantastic.
