You have all the ingredients you need.
Black salad dressing
Tastes great but looks very ... well, black.
1 tbsp balsamic vinegar, or more to taste
1 tbsp olive oil
1 tsp thyme
1 tsp oregano
1 tsp pepper, freshly ground
1 tsp capers, or more to taste
Mix at the table and pour immediately over the salad. Makes enough for 2 people.
Traditional Italian
This one is "traditional" to my family. I make this with herbs and no salt, my mil makes it with salt and no herbs.
2 tbsp red wine vinegar
1 tbsp olive oil
1 tsp rosemary, ground (optional)
1 tsp oregano (optional)
1 tsp pepper, freshly ground
1 tsp salt, optional
Mix well and serve immediately.
Vinaigrettes typically work (for me) with a bitter tasting vinegar mixed with olive oil in a 2-to-1 (vinegar to olive oil) solution. If you prefer less bitter vinaigrettes, use a 1-to-2 (vinegar to olive oil) solution. You can always replace the vinegar with lemon juice for a fresher tasting salad dressing.
If your salad has tomatoes or onions in it - capers are a nice addition. Just remember to rinse them to remove the salt and brine (or omit the salt from your salad dressing).
I don't make yogurt-based salad dressings but see Here for a good list of yogurt based salad dressings.
