My little brother had a bunch of his little friends over, and I was bored and didn't have anything better to do, so I decided to make cupcakes for them! I haven't baked in about a month, so when my mom saw me baking she was surprised but also happy that I was baking. She wanted something sweet. And shes not one to eat sweets really at all. It was like telekinesis! So she was extremely to see me making something sweet. She did say she wished I made Banana Bread, so I'm probably going to make that tomorrow for her to please her.

These cupcakes came out really good. I took them out of the oven right on time and they were nice and fluffy soft. My favorite part of the whole thing was to decorated them so thats what I was waiting for. My little brother did a few because he really likes to help me when I'm in the kitchen cooking or baking. His cupcakes he decorated is the last picture. They were so cute! He made the heart one for my mother. It was really sweet of him.

I didn't get to try how the cupcakes were because one, I'm dieting, and two, even if I wanted to, they were consumed by my brother and his friends before I even blinked! I'll take it by them eating them so quickly that they were good.



Recipe

2 1/2 cups flour
2 1/2 teaspoons baking powder
1 3/4 cups sugar
1 1/2 sticks unsalted butter
2 large eggs
2 teaspoons vanilla
1/2 teaspoon salt
1 1/4 cups milk

1. Preheat over to 375 degrees.

2. In large bowl, cream together butter and sugar. Beat in eggs, vanilla, salt and baking powder. Add flour in alternating with milk. Beat at low speed for 30 seconds or until smooth. Put batter evenly into cups. Bake for 18 to 20 minutes or until tops are pale gold.

3. Let cool for 45 minutes before decorating.
