Grilled Veggie Sandwich

i found this recipe on All Recipes.com. it had 5 stars and 97 good reviews, so i just had to try it. i've already made it twice, and i intend on making it again next week~~!

i made a couple of changes:
  • asiago cheese focaccia bread - cut in fourths
  • grilled the veggies in foil in the oven
  • used mushrooms instead of yellow squash
  • put sandwich together, wrapped in foil in oven for 20 minutes @ 350 - this made the bread a little toasty, and melted the feta cheese
  • pressed sandwich, because otherwise it's too big to bite & veggies fall out
you can tweak the recipe here and there and it will still be fantastic. the bread and the mayonnaise mixture really makes it! and trust me, you won't miss the meat in this recipe. it is very filling and oh so tasty. after my boyfriend took his first bite, he was like, "mmm! how did you do that?!" haha.

i have a question though, i'm going to be cooking this meal for 5-6 people next week... what kind of sides do you think would pair up nicely with it? the first time i made it with onion rings, and the second time i went with garlic green beans and potatoes. i'm thinking maybe a potato salad next?
