So it's hot here in the New York metro area. Hot and humid and my little apartment without adequate AC and a strong tendency to heat up and stay heated. The other day I boiled water to poach an egg and it made it unbearably hot. God, I wish I had a grill. And you know, somewhere outdoors to put the grill.
So far we've made big salads with fresh goat cheese and two eggs poached over the top (really delicious with a tangy mustard vinaigrette- or you can succumb to exhaustion like me and cheat and use Brianna's vinaigrette). Yesterday, was a really lazy dinner made up of veggie burgers crumbled and stuffed into pita with leftover goat cheese and a tomato salad (just tomatoes, olive oil, vinegar, salt, pepper.) Tonight I'm planning pita pizzas, made in the toaster oven with some mozzarella, bell pepper, and possibly spicy Italian sausage taken out of it's casing and heated in the microwave. I've also got
these summer rolls as a possible future beat the heat dish, just without the noodles and possibly made with pre-cooked frozen shrimp.
Many of those meals will be accompanied by a drink I had for the first time this weekend, ginger beer, bourbon, and a squeeze of lime. Really refreshing on a summer day.
So that's my plan, what do you cook (or drink) when it's too hot to ACTUALLY cook?
