watermelon lemonade

a few years ago, my work friends and i would have lunch at "the country club" (actually it is open to the public but that's what it's called) and in the summer we'd drink watermelon lemonade spiked with vodka. i've been wanting to recreate this, and see many different variations but have no idea what is a good one ( Read more... )

4 cups cubed seedless watermelon
1 cans frozen lemonade concentrate (12 oz)
2 cups water (approx)

Put watermelon in blender and blend until smooth. I like to strain mine. My mom doesn't. I guess it depends on the watermelon you use. Anyway, put the blended watermelon & lemondade in a pitcher/punch bowl. Add the water in increments until it's just right for you! We don't add the vodka to the entire mix, just to our own glasses cause the kids love it too!

how big of a watermelon is 4 cups?

It'd be about half of a medium sized watermelon. A lot of grocery stores sell it already sliced but it's really expensive that way.

yea. i have bought pre sliced watermelon from trader joe's. but i'd rather buy a whole or half of a watermelon which would be cheaper.

Well, we're a big family so we buy the biggest sweetest watermelon we can find. I just chop it up and literally shove it into measuring cups. The rest never goes to waste. My sister used these small watermelons that are referred to as ice-box watermelons. They tend to be about 5-6 pounds and very round. She used two whole ones and the recipe worked just fine. But she had to strain because they do have some seeds.
