My fiance and I had this grand idea for a chicken dinner. Take some boneless/skinless chicken breasts and marinate with fresh orange and lime juice. Once done marinating, top with spices (I don't have the exact spice name with me, ATM) and cook ( Read more... )

There's a wonderful recipe I make occasionally using orange & lime juice similar to what you're wanting to make; was served something like it years ago at a restaurant in Cozumel. I've substituted juice for fruit with great results; it's just less pretty/interesting without the fruit. However, I wouldn't mix the orange and apple; citrus and non-citrus, a no-no in my book.

And I'd use rice rather than potatoes with the chicken. If you (cheat and) mix in a package of chicken gravy mix & a cup of water when you're baking the chicken then you'll have a lovely thickened gravy to pour over the rice.

Yum, now I think I know what I'm making for supper!

I like seasoning the chicken with garlic powder, salt, pepper, and a little basil/oregano if you have it (if not, s'ok) and then baking it until the juices run clear (don't overcook! dry chicken is gross).

You can also definitely marinate it in the orange juice. I've done that before too.

Toss the potatoes with the dried onions and some garlic as well as salt/pepper.

You pretty much summed up with I tossed together just now. I put 1/2c OJ in a glass baking dish, tossed in the chicken and added all those spices. I also tossed in just a touch of my caribbean spice rub. Hopefully it'll come out well!

I'm completely taking the potato idea, that sounds really, REALLY good.

I would use the Orange juice but no apple juice. I also see no reason not to use all of the spices you listed. I would mix some of the spices together (caribian and garlic with some salt and pepper would be good.) and use them as a dry rub after you mairinate the chuicken in the OJ. If you have some worcestershire sause I would add some of that to the OJ or maybe some other kind of flavorful liquid you have around. Get creative but stay away from mixing OJ and Apple Juice.

Yea, I tossed the apple juice idea out the window when I thought about it, hah.

If you check above, I pretty much combined what you guys suggested and am hoping for the best. It smelt delicious so here's hoping it tastes that good. I'm going to give them a dry rub of the caribbean spice when I'm done marinating them and cook them up in a frying pan. Someone over in cooking gave me a deglazing recipe that I'm going to attempt.

When you get the lime/orange marinade going, I'd suggest a rub of corriander and chili powder after. You'll get a fruity/sour/hot/savory chicken then.
