Profiteroles are one of the most versatile desserts - they can be presented simply with a custard filling and a dusting of icing sugar for an afternoon tea, or filled with pastry cream and coated in caramel to form a croquembouche. Either way, they make for a great pastry to have in your repetoire :)

Ooooh, balsamic strawberries would be great with the pastry cream in these! And maybe a little dipping choc on the side? Unless I'm being greedy :/

That's actually my preferred way of having these as well... and my no milk/cream chocolate sauce recipe is the next one I'm planning on putting up ;)

I actually made them with a creamy white chocolate filling and coated in caramel :)

That looks gorgeous!! I'm so glad that you gave it a try, and even happier that you were happy with the results! :D

(Am trying to control the envy I feel for your luscious-looking strawberries! It's pretty much winter here now, so a 350 gram punnet of sickly looking strawberries is almost AU$10! *sigh* I'll just have to look at pictures of them instead :) )
