Been on a little Mexican kick around here lately. Last night was Paco's Pork and Rice. Slow cooked the pork for two days in a pot. Still playing with herbs and spices, but, it had a nice little bite to it. Rice was simple Spanish Rice. I asked a couple of Mexican friends how their MOM made it. Mostly I got a version of Rice Pilaf with a bottle of Salsa in place of half the water. It works pretty well. Mexican comfort food?? Anyway, that's how Cruz's made it. So, all in all, not a bad effort. Worth working on. As a last little flavor treat I added the green and red peppers on top. Just sauted in oil and a splash of rice vinegar.
