elizabethfinch. Dinner tonight was Chicken Rockefeller with Lobster Ravioli in a tomoato cream sauce. It was excellent! I didn't exactly use a recipe, as I made it up as I went along, basing it upon my memory of a dish I used to get at a restuarant that used to be in Atlanta many years ago. However, here are the general instructions:
4 Chicken breasts, pounded to double original size
2 eggs, beaten, used as eggwash
Bread crumbs
Olive Oil
Filling:
Pkg frozen spinach, drained and squeezed
1 cup half and half
Handful of shredded mozzarella
Handful of shredded fontina
Couple of handfuls of Bleu cheese
few Tablespoons parmesan cheese
Handful of crumbled bacon, about three pieces
Couple of tblsp chopped garlic
Mix all ingredients for filling. Stuff chicken breasts with mixture and secure with toothpicks. Roll in eggwash and bread crumbs. Sute lightly in olive oil till lightly browned. Bake at 350 35-40 minutes.
This may be scaled down for 2 breasts as well. I used 2 breasts but ended up with enough filling for four.
For the Lobster Ravioli I used store-bought lobster ravioli and for the sauce I used crushed tomatoes, basil, oregano and a touch of cream.
