I love to make Mexican food almost as much as I like to eat it. Last night I made enchiladas and I must say they were FABULOUS!!!!!! I had some for breakfast. (insert smile here) The way I make it is sorta like building lasagna, I really like it this way because you can see all the layers. Here is a pic down below, I didnt wait for them to cool off enough so there was hot and messy when I snapped the photos. Around midnight when we *thought* we were hungry again, it really held up and you could really see all the pretty layers. For more pics and the EASY recipe.....click on the link below.
So I take a caserole dish and spray it lightly with olive oil, then I place two tortillas down, to cover the bottom.....(I like to use the flavored ones sometimes.....last night I used Roasted Red Pepper tortillas and it was awesome)....then I put down a layer of refried pinto beans, then salsa and lots of cilantro, another layer of tortillas, then I spread black beans.....not refried with cheese on top and some finely minced onions, another layer of tortillas with re-fried black beans, guacamole, more cilantro and some chili powder because I like it spicy. Sometimes I throw peppers in the mix but I didnt last night, corn is good too. Last layer of tortillas and I pack it down and tuck the sides in so when I pour on the enchilada sauce it falls down in the sides. I like to cook things slow and low so it was in a 300* oven for about an hour. Take it out, top with MORE cheese and once its cooled top with more cilantro. I like to serve it with salsa and sour cream. Its so easy to make, its cheap and you can eat it for a week!!!
