Irish Soda Bread

I was bored this evening and felt like cooking bread. However, I wanted to make something simple so I made Irish Soda Bread. This recipe takes very very little time to prepare! The first thing I did was set the oven to preheat and I had finished preparing the dough before the oven had even reached the proper temperature! This recipe is dead easy and the finished product is delicious.

I used this Irish Soda Bread recipe from Cooking Light. I only veered from the directions in that I used my KitchenAid mixer to knead the dough for a bit. I haven't much opportunity yet to use my KitchenAid for kneading and I just wanted to see how it would do. It performed beautifully and the bread is delicious!

From start to finish, the process of making this bread took maybe 40 minutes and that includes the 30 minutes of baking time. Very quick! If only all breads were so simple...
