Very Simple, Excellent Chicken with Cashew Recipe

In celebration of Chinese New Year, I have been covering only items pertaining to Chinese food on my blog this past week.

I reviewed Kylie Kwong's new book, Siimple Chinese Cooking,.

After the review, I did a post on a recipe I did from it for Chicken with Cashews--which is a very popular Chinese restaurant dish that I generally dislike intensely, because it tends to be bland, gloppy and greasy.

This version is none of these things, and even better than that, most of the ingredients can be had from a typical grocery store. The simple, clean flavors are amazing, and I have to say that the cucumber she adds at the end is a great flavor, texture and temperature contrast with the nuts and chicken.

All in all, it is a great dish. Look for the recipe, with both the original ingredients list and my modified one, and a photo here, and please try and make it. It is really, really light, flavorful and deeply satisfying all at once.
