These are instructions because I just made this up out of my head and no real measuring was involved. :)
1 med onion, chopped
1/2 green bell pepper, chopped
10 mini carrots, shredded
1/4 lb turkey sausage left over from previous adventures
1/2 cup white wine that's hanging out in the fridge
red pepper flakes to taste
2 cubes of frozen minced garlic (from Trader Joe's)
1 cube of frozen minced basil (yay TJ's!)
1 huge (28 oz?) can of crushed fire-roasted tomatoes
1 can of white kidney beans
So cook the veggies until they are almost soft, then brown the turkey in the same pan. This should make a lot of nice brown-bits on the bottom of the pan. Pour the wine in and scrub-up those brown bits (because they taste good). Then stir in your spices and dump in the contents of the cans. Cook until heated through.
Also tastes good over brown rice the next day.
