Mmmm...celeriac

Hey guys! I picked up some celeriac (celery root) at the store today and I think I really want to make some soup with it ( I reeeeaaaallly like Pret a Manger's Celeriac and Parsley Mash soup, but I don't have the cream or the parsley). I've found a couple celeriac-leek soups that look pretty good, but I was hoping for a tried and true recipe that will rock my socks off! I know this community knows how to cook for REALS!!! =)

Any other awesome ideas/recipes greatly appreciated!
