Cola Pot Roast - 1 Can Down!

Dec 23, 2006 19:38

Ok, we are now down 1 can in the "use up the regular coke" experiment.  I had to make this pot roast because, well, it's pot roast and I had everything but the meat itself on hand.  I figured it would be decent, but I was unprepared for it's succulent goodness.  You can't taste the coke at all even though I opted not to measure it and dumped in an entire can for my measley 2lb roast.  It was heavenly with mashed potatoes to soak up the juice/gravy.  I highly recommend it if you're jonesing for some comfort food and only have $8 to spend on meat but want some beefy goodness.

Ingredients:
1 (14.5oz) Can Stewed Tomatoes
1 C. Cola
1 Packet Dry Spaghetti Sauce Mix (I just tossed in a ton of Italian Seasoning blend myself)
1 C. Chopped Onion
3/4 C. Chopped Celery
1 1/2 tsp. Salt
1/2 tsp Garlic Salt
3 lbs. Beef Chuck Roast (or a 2lber in my case)
2 T. Vegetable Oil

Directions:
In a large bowl, break up tomatoes in their juice.  Stir in cola, spaghetti sauce mix, onion, celery, and garlic salt.  Stir until spaghetti sauce mix is disolved.

In a dutch oven, over medium high heat, brown meat in oil about 10 minutes  on each side.  Drain off all fat.  Pour tomato mixture over meat.  Cover and reduce heat to low.  Simmer slowly for about 2 1/2 hour, or until meat is tender.

I got this recipe from allrecipes.com and one of the reviewers mentioned that you could do this well in a crock pot on high heat for 4 hours and it turns out well.
