So last night I went to a potluck, and one of the things they were begging people to bring was entrées. Well, I really wanted to make a dessert because I found a brownie recipe I was dying to try out, which I actually got it from here! I cannot for the life of me think of who posted it though, but it was ultimate turtle brownies, and
this is the recipe. If that's your recipe, or you know who posted it, please tell me! I want to say THANK YOU because those brownies were amazing.
But, this post isn't about that. I needed something that would be quick and easy because I would be making it the day of the pot luck. Well, what I found wasn't exactly quick, but it was easy, and it was really, really good too.
Start with the meatballs.
1 lb hamburger meat
1/2 cup crushed crackers*
2 tablespoons finely chopped onion
1 teaspoon salt
1/4 cup milk
1/2 teaspon Worcestershire sauce
1 egg
Mix all the ingredients in a bowl. I prefer to mix with my hands, but you can mix them however you want. Shape them into balls, I made mine about 1 1/2 inches, but you can make them as big or as small as you like, but if they are too small, they have a tendency to fall apart. Place them into a skillet and cook over medium heat, turning them over occasionally until they are brown all the way through. When those are done, take them out and set them aside. Turn off the heat and drain the fat from the skillet. Now we'll start on the sweet and sour part.
*the recipe actually calls for dry bread crumbs, but I prefer crackers over bread crumbs.
1/2 cup packed brown sugar
1 tablespoon cornstarch
1 13.5 ounce can of pineapple chunks
1/3 cup vinegar
1 tablespoon soy sauce
1 small green pepper, coarsely chopped
Mix the brown sugar and cornstarch in the skillet. Stir in the pineapples with syrup, vinegar and soy sauce. Put on medium heat until boiling, stirring constantly. When that boils, reduce the heat and add the meatballs. Cover and let them simmer, stirring occasionally, making sure to cover the meatballs in the sauce. After they simmer for ten minutes, add the green pepper. Cover again and continue to let simmer, still stirring occasionally for about five minutes.
These can be served by themselves or over pasta, or rice, or whatever you think would go good with them. This makes about four servings. Sorry I don't have any pictures :( I didn't think about it until... everyone had eaten it XD
