sponge cake mishap

I tried a sponge cake recipe from a cookbook and it didn't work out.

3/4 c. sugar
6 large eggs
1 c. all purpose flour
4 tbsp. clarified butter

I changed the sugar into splenda and the butter by vegetable oil. The result was something indeed very much like a sponge (dense, bright yellow), but not a sponge cake and tasting very strongly of egg. What do you think went wrong?

And...do you have a better recipe? >.< My dad wanted to have it with Dulce de Leche...

*sigh* I hate it when I mess up in the kitchen and it happens way too often...
