After changing my Thanksgiving plans nearly a dozen times, my husband and I finally just decided to go out for an Indian feast yesterday. I still feel the need for stuffing and potatoes, though, so today I am making a mini-Thanksgiving dinner:
Chicken under a Brick with Fresh Garlic and Herb Sauce, Stovetop stuffing, mashed potatoes, cranberry sauce from a can, and tomato & onion salad, with blueberry pie for dessert.
I have two questions I'm hoping some of you might be able to help me with:
1) I'm really excited about the blueberry pie and would like to eat it tonight, but I just realized that the dough is supposed to sit in the fridge for 4 hours before I can roll it into a crust. How strict do you think this guideline is? If I waited for say, two hours, do you think it would still fall apart? What if I put it in the freezer for a while?
2) I'm making mashed potatoes, and want to boil/mash them toward the very end of my prep. Would it be alright if I peel them, cut them up, and put them in some cold water in the fridge for awhile?
