Chicken, baby potatoes and corriander. (Also known as Cilantro. It's a saucy wench of a herb.)
I've just had a tooth removed and so eating is something of a painful adventure at the moment. So I cobbled together something that would be soft enough not to need a lot of chewing and more flavour-full than baby food. This was the result. And my word, was it good.
Serves 1.
1 chicken breast, skinned and cubed.
400g washed, peeled, par-boiled baby potatoes.
1/4 cup fresh corriander (cilantro.)
1/2 cups water
3-4 cloves crushed garlic
pinch of fresh chilli
1 tblspn balsamic vinegar, plus an extra dash.
Olive oil.
Heat the oil in a shallow pan over low heat, add water and garlic and chilli, stir around to combine well. Add the potatoes then the chicken, leave to simmer over a low flame for 15 minutes, or until the chicken is cooked through. Stir in 1 tblspn of balsamic vinegar, then add the corriander and stir well. Increase heat a little so water reduces to a nice looking sauce consistency. (It took about 5 minutes for me on a gas stove top.) Remove from heat, add a dash of balsamic vinegar, stir through and serve.
Simple and tasty. My only regret is that I didn't make more!
