Chopped Caesar Salad
Serves 2 as a side salad
Dressing:
3/4 cup Mayo
3 cloves minced garlic
1/4 cup grated manchengo cheese
1 tsp Worcestershire Sauce
2 tsp Dijon mustard
1 TBSP lemon juice
2 tsp extra virgin olive oil
Salt & Pepper to taste
(This will keep for a week or so in the fridge, obviously you won't use all of it for the salad for 2)
2-3 cups chopped Romaine hearts (chopped small, you want to be able to eat it with a spoon!)
1 cup fresh croutons (below)
1/2-3/4 cup shredded Manchengo cheese (to taste)
1 chopped vine ripe tomato
To make croutons: Slice about 3-4 slices of sour dough bread then cube. Place in ziploc bag, drizzle with olive oil (about a tablespoon or so) then sprinkle with salt, pepper & garlic powder to taste. Preheat frying pan over medium heat, cook cubes until lightly browned, tossing frequently.
Mix 2-3 tablespoons of the dressing (to taste) to lettuce, croutons, cheese & tomatoes. Add your favorite meat if you want!
