Spinach-artichoke dip.

1 medium onion
2 tbs (or so) of garlic
one package of frozen spinach, drained
one can of artichoke quarters, drained
4 oz (half a brick) of cream cheese
about +/- 3/4 of a cup of mayonnaise
+/- one cup of fresh grated parmesan cheese
+/- half a cup of dutch gouda
about a tbs. of lemon juice
black pepper
cayenne pepper
dill

Preheat oven to 350.

Chop the onion into medium pieces (they don't have to be small, you're going to throw them in a processor anyway) and saute them with the garlic and pepper until soft and golden.

Fling all the ingredients (use the cayenne and dill to taste) into a food processor, reserving 1/4 cup parmesan for the top of the dish.

Process until it all resembles green wallpaper paste, more or less.

Put the mixture in a baking dish, throw the rest of the cheese on top, and bake til the cheese on top goes golden and bubbly, about a half hour.

Let cool.

Eat.
