A bit of spice for the summer

Here's a recipe that I created for a party. You can jazz it up or keep it as is- have fun with it!

Sunfell's Dirty Rice Meatballs

1 Box Zatarains Dirty Rice Mix
2 lbs ground beef (or 1 lb beef, and 1 lb ground pork)
2 eggs lightly beaten
1 can tomato soup (or 2 8 oz cans of tomato sauce)
2 cups water, divided

Preheat oven to 350. Dump Dirty Rice mix into bowl and mix the seasoning in well with the rice. Add ground beef, eggs, and 1 cup water and mix well. Divide mix into 16 meatballs, and place into shallow casserole. Mix tomato soup and 1 cup of water together, pour over meatballs. Cover, and bake at 350 oven for 45 minutes. Uncover meatballs, and bake an additional 15-20 minutes. Serves 4-6 people.

I had a friend do this recipe with half ground beef, and half anadoulle sausage- it came out really spicy, so watch out!
