Hey guys, this is first post here, been lurking with an occasional comment. You guys rock my culinary socks.
My food usually looks odd, but is tasty.
Here's a delicious example.
Inspired by a recent comment about shepherd's pie with sweet potatoes (ala new zealand), i remembered that i had some sweet potatoes.
So I steamed one, mashed it with butter and soymilk, and mashing in the remains of my mulberries from last week's farmer's market, as well as colby jack cheese. Adding salt, this tasted awesome, so I decided to go the whole way: I put my mashed mix in a casserole dish, topped it with grated carrots, cubed tofu and colby jack and parmesan cheese. Baked for 20 min at 350 deg F, mixed up a bit, added more salt and voila -- yummy dinnery goodness. And it looks kinda neat too, with the orange carrots and purple mashed berries.
