I have recently come into some vanilla beans, and the smell is so amazing that I must do something with them. I've heard you can put them in sugar and make the sugar vanilla-y -- any tips? How much sugar per vanilla bean? Should I slice or cut up the beans? And can I do the same with honey? Or honey and cinnamon sticks? I love cinnamon honey on toast, but I don't know if the stick would just get soggy and gross.
