I promised this recipe a while ago, and am finally getting around to posting it. Sorry for the delay.
These are really really nice if you like the flavor of cardamom. I've made them with a double amount of cardamom (I start with whole cardamom pods, then shell and grind the seeds as I need them), and it was sooo good. Almost too much, but lovely. I also only bake these for 8 minutes in a 375 degree oven. They should be very light in color, just starting to show a hint of a golden color. Otherwise, they'll be too crunchy (in my opinion). Find out what works for you. The recipe's really easy, and I think the hardest part is to roll and cut them. I chilled before rolling.
These cookies come out light and delicate, with lovely little flecks of cardamom and thin threads of lemon peel (especially if you use a plane zester thing like I use), and a nice fragrance.
1 cup butter
1 cup sugar
2 eggs
4 cups flour
1 teaspoon cardamom seed, crushed
grated rind of 1 lemon
Cream butter and sugar; add other ingredients. Roll very thin on floured board; cut and bake in a hot oven, 400 degrees F, for 10 to 12 minutes.
