Mushroom Sandwich

This is my first post in this community. I made a yummy dinner tonight and thought I'd share the recipe. The photo looks a little funny because the sandwich was steaming.



Mushroom Sandwich

1/2 lb pork sausage (not in casings)
2 T olive oil
2 medium onions, chopped
3 T butter
4 cloves of garlic, minced
3 cups sliced mushrooms
3-4 T white vermouth or white wine
3 cups spinach leaves
salt & pepper to taste
3-4 T cream

focaccia bread
sliced Gruyere or swiss cheese

Crumble and brown the sausage, remove from the pan and set aside. Add the olive oil and onions, cook until starting to soften, add the garlic, cook for a minute, add the butter and mushrooms, cook on fairly high heat until mushrooms give up their liquid and brown slightly. Deglaze pan with the wine. Add the spinach and wilt it. Add the cream, season with salt and pepper, return sausage to the pan. Stir to combine. Meanwhile slice the focaccia bread into a sandwich size portion and then in half (make it half as thick). Cover cut face with cheese and toast or broil until cheese melts. Add the mushroom mixture and serve.

It is rich so it might be best in a smaller portion with a salad.

Sausage and or wine could be omitted and it would still be yummy.
