Harvest Pumpkin Stew
3 golden potatoes, diced (leave skins on)
3 red potatoes, diced (leave skins on)
1 pound pork shoulder, cubed
2 cups pumpkin, diced
1 sweet yellow ("Mayan") onion, peeled and diced
1 1/2 cups baby carrots, washed
2-3 TB olive oil
8 cups vegetable broth or water
1/2 tsp each: cinnamon, nutmeg, cloves
1/4 tsp ground ginger
Optional: 1/2 cup golden raisins or dried cranberries (or both)
Heat oil in deep stew pan. Clarify onions and add stew meat; sear stew meat on all sides. Cover with broth; stir. Add all other ingredients including spices, stir thoroughly, and bring to a boil. Reduce heat, cover, and allow to simmer for 1 to 2 hours, stirring occasionally.
Serves 6.
