This is probably one of the best things I've ever made ever. I'm not too sure what to call it, but Seamus said it was like Thomas Pynchon's book Gravity's Rainbow: "I'm not sure I understand all of it, but it's definitely very enjoyable." He also said that with the bean sprouts, the texture made him think of some crazy tropical ramen, but he ate all of the sizeable portion he took out, and would have had seconds but I beat him to it and ate the rest myself.
Tom Ruggles Cucumber Salad
I had the idea to add some roasted cashews to the top after taking the photo, and man was that ever a good plan. Next time, I'll go out of my way to find some fresh beansprouts. That was the only thing I can complain about. They just weren't quite as crunchy as I'd like, and they definitely had a canned flavor to them. Spicy and sweet, crunchy and refreshing. I'm pretty proud of this one. The asparagus-tofu fried rice that this salad accompanied came out wonderfully well, too, but my camera's batteries crapped out after the cucumber salad photo shoot.
I wish I hadn't fed all the leftover mandarin oranges to the birds, because now I want to go home and make more for dinner!
