I made this for dinner tonight 'cause squid was on sale, but I wanted to make a special dinner for Bryan's birthday. We love squid. It's super good! I would up the garlic and ginger, but I just really love garlic and ginger. I also subbed cilantro for parsley, since I really don't like parsley that much. I'm about to pop some brownies in the oven for hot fudge brownie sundaes.
Stir Fried Squid with Spinach and Herbs
Servings: 4
1 pound squid
1 tablespoon olive oil
1 teaspoon sesame oil
1 tablespoon mustard seed
4 whole green onion
1 teaspoon chopped garlic
1 teaspoon fresh ginger
1/2 whole red bell pepper, seeded and sliced
8 whole snow pea pod, fresh, trimmed
5 ounces fresh spinach
2 tablespoons cilantro
1 tablespoon basil, fresh
2 teaspoons lemon juice
1. In a deep frying pan or, preferably, a wok, heat the olive and sesame oil.
2. Add the mustard seeds and cook until they start popping.
3. Add garlic and ginger and continue cooking for 30 seconds.
4. Toss in the squid rings and stir fry for 2 minutes on medium to high heat.
5. Stir in the capsicum and spring onions and cook for one minute.
6. Add the snow peas and washed spinach and cook for a further minute, or until the snow peas soften slightly.
7. Sprinkle lemon juice over the stir fry, add basil and parsley and mix well.
8. Serve immediately.
