Dinner tonight took about 12 minutes to make, and was so delicious I ate the whole pot and now I don't have anything for lunch tomorrow!
I started by making some jasmine rice in the *gasp* microwave! It was the first time I'd done it that way, and it was way better than when I make it in the pot. As good as rice cooker rice, even. And in only 10 minutes!
Then I started a pan on med-low heat with some olive oil. Tossed in half a diced onion and 2 cloves of crushed garlic, and let it cook just the amount of time it took to slice half a dozen mushrooms. Threw them in, added some crushed flax seeds and some slivered almonds, 4 cubes of frozen basil [yeah, I'm lazy] and some good quality sea salt, some fresh pepper and some paprika. Took it off the heat, added half a diced tomato and some more olive oil, and then tossed it with the rice.
Oh. My. Stars.
