So, tonight it's going to be Rainbow Colcannon for dinner. Since I'm a little low on potatoes, I'm stretching them with carrots and beets, which should create an attractive technicolor effect along with the potatoes and greens, as long as the beet juice doesn't just dye everything hot pink (in which case it will be Barbie's Dream Colcannon, or maybe High Femme Colcannon). It should still taste fine.
ETA: it's tasty enough, once I put lots of butter and salt on it, and the beets restrained themselves and only put some pink spots on the potatoes. Although the nettles probably would have been better chopped in smaller pieces, but I'm a coward and wanted to handle them as little as possible.
