Oooooh, this is a hard one, because every time I think of an AU I like I convince myself I'll write it someday ...
The only one I'd like to read that I'm sure I can't write is the Veiled Threat AU where she picks Jones instead of Peter, and he has to play the Pastry King of Brooklyn. And instead of borrowing Neal's date with Sara he borrows Neal's bakery, of course. Because shenanigans at The Greatest Cake are always awesome, and there should be more of them. Sadly, Jones is one of those characters whose POV I absolutely cannot wrap my head around enough to write him, but I'd love to read it.
Five AUs I would love to write someday but have no idea when/if I'll find the time:
1. The one where Neal gets cut up and slices open an artery going through the window in Point Blank. (Because what that scene really needs is MORE ANGST, obviously ... *evil laugh*) Which was originally just going to be a short little plotless h/c thing with Neal almost bleeding out on the floor and everyone freaking out about him, but then I got to thinking about what would happen after that, since the whole almost-bleeding-out-on-the-floor thing cuts short the resolution/closure he gets in canon, and it somehow evolved in my head into The Epic Darkfic AU Where Neal Shoots Adler.
I actually have several AU plotbunnies that involve Neal shooting Adler, including one where he and Fowler team up to go after Adler together. (That one I'm definitely going to write someday. Because that would be AWESOME.) I apparently have a thing for revenge arcs. And Neal with guns.
2. There's the whole "Five Alternate Endings for Season Two" fic I have half sketched out (the Neal and Fowler fic is one of the five). All of which change something about that final moment at the warehouse with Neal and Peter and Adler. There's the one where Neal gets caught in the explosion and dies, and the one where Alex gets away with the treasure, and the one where Adler catches Mozzie in the act and kidnaps him to force Neal to help him escape with the treasure. And three where Peter doesn't shoot Adler - including one where someone else shoots Adler, and one where Peter shoots one of Adler's minions instead of Adler himself.
Because I want to explore what happens if Adler actually goes on trial (most likely, not much - a few years for the Ponzi scheme, but there's no actual evidence tying him to Kate's death besides Larssen's testimony, and I have no doubt someone with his reach could silence Larssen) and how Neal reacts to that.
I want Neal and Peter to have a conversation about how Neal feels about Adler being dead, and if that actually helps or fixes anything, after everything that happened at the midseason.
And I want to explore how S3 would have gone if Peter had known from the beginning that Mozzie took the treasure without Neal's knowledge or help, because the only reason for Peter not even considering that possibility is being upset over just having shot someone. (What is Peter's first question every time he accuses Neal of something and Neal says he didn't do it? "I'm not working on anything" "... which means Mozzie's working on it", etc.) It wouldn't change Neal's basic problem - he still has to decide between going with Mozzie or helping Mozzie escape by himself, and either way he's going to be sneaking around and lying to Peter in order to keep Mozzie out of jail. But I think that way it would be more of a story about conflicting loyalties and the definition of home, rather than trying to be a morality tale, and I think I would have liked S3 better without the moralizing.

The one where Kate and Neal get on the plane and jump out over the ocean and do awesome badass things with parachutes and swim to shore and live happily ever after on the coast of France somewhere. Someday I am going to write this. Because after writing her going through all that preparing for the jump, I want to write a successful happy ending for the two of them. *hugs my poor doomed ship*
