yummy dinner

I made an awesome vegetarian wrap tonight for dinner...that I thought I'd share with you all.  I happened to have some morningstar chix strips in my freezer (left from when
lovesthesox came to visit), so I browned those with chopped onions. I then took a big flour tortilla,  spread some chipotle ranch dressing on it, then loaded it up with lettuce, tomatoes, the onion/chix mixture, leftover brown rice, and shredded monterrey jack. Yummy!  I don't know if I was prouder for thinking this up--it's like a healthier version of what I'd get at qdoba I suppose--or the fact that I found the tortillas on the clearance shelf at Target for 50 cents!!! Target clearance shelves are amazing...I know tortillas aren't that expensive to begin with, but I feel so GREAT when I buy them on super sale :)

This weekend I did a lot of shopping and eating, and not so much studying.  Russ came over on Friday, and then all of his tutoring jobs were cancelled for one reason or another, so we ran around doing fun things all weekend!  I made enchiladas on friday night (thanks Target!), and we went looking for a suit for Russ on Saturday, so we could go the IMS Semiformal on Sunday evening.  Seriously, who throws open bar events on Sunday nights from 8-12?  I was on the planning committee, but definitely wasn't a fan of the time we chose.  Russ and I had a great time, but we couldn't stay the whole time, because Russ had to drive back to NJ on monday morning in time to teach high schoolers...  It was a good event regardless, and I felt really proud because I picked out the DJ--DJ BOB, that is!! For you non-pton people reading this DJ Bob is only the well-loved, and widely-used DJ at princeton...we called him DJ Bob, but it was actually a bunch of DJs, and on any given night DJ "Bob" could be in multiple locations!  Well anyway, yes, I asked DJ Bob to play our semiformal, and yes, it was awesome :-D

Anyway, that was my weekend...look I'm posting more!  Now off to study more too, hopefully...
