Menu for May 9-15, 2011

This was supposed to be one of our vegetarian weeks but we didn't quite have enough food in the fridge, so we're cheating by having delicious but meaty lasagna at the end of the week. Next time we cook vegetarian food we'll make extra....

Anyhow, we are definitely not tired of asparagus, so we ended up getting enough for most of the week. Since we did a declutter push over the weekend (on the dining room), we raided the freezer for our meals.

Main dish: Vegetarian black bean and butternut chili for most of the week, accompanied with asparagus and quinoa, followed up by lasagna for the end of the week.

Soup: Butternut and broccoli curry soup (yes, some butternut redundancy here.) Plus some red lentil and chard soup.

Salad: Been just having light vinegrettes with either muscat vinegar or Meyer lemons, plus olive oil. The spring onions are good right now so I've been cutting up a big spring onion each day, plus some radishes, cucumber, and what is probably the last of the avocados for a while.

Fruit: Strawberries! I got some mint on Wednesday so I'm adding mint to them now.
