Thank you! I'm trying to decide between cooking some catfish I got today using this method or Thai basil curry. I have some nice fresh beet leaves.....
I didn't think the basil would go well with the beet leaves, so I did:
Green tea, a few tablespoons of sake, lots of garlic, a little olive oil, and salt & pepper for the steaming liquid and greens. Cooked the beet leaves for two minutes (and actually should have omitted the pre-cooking; they were so tender they got very very tender in the cooking) and steamed the catfish on top of them with salt and pepper and a little olive oil. Yum!
OOoooo... thank you. That sounds very good indeed, and I just discovered beets in my garden. I know, I know, I should have realized I planted them, but I just discovered them today... and the greens are *beautiful*.
