This is almost not a recipe at all, since it's so simple. However it's very nice to have some simple methods in the repertoire for days when complexity is overwhelming ( Read more... )

Mine is a National and does have a porridge setting on it. Also a "cake" setting that I've been afraid to try! Otherwise it Just Works, and handles brown rice as well as white (brown rice takes longer), and up to three cups of rice. You want to make sure to use the measure included with the rice cooker because rice cooker cups are not American cups. I pre-wash sushi rice in Japanese fashion, but not basmati. I've also cooked garbanzo beans in it on the rice setting.

The major thing you're looking for is "fuzzy logic" which I think just means it has a sensor and a chip to determine how fast the rice is cooking and adjust the temperature on the fly. I also really like that ours has a non-stick coating on the inside, which makes it a lot less likely for the rice to stick to it. It was a gift from Chrisber and Christy and it's been completely wonderful.

There is another popular Japanese brand that starts with 'Zor' but I can't remember the rest of the name. I'd probably go through Amazon reviews if I were shopping for a new one; the small appliances there usually get pretty informative customer reviews.

They mentioned the weird countdown thing in the reviews, where it doesn't count down until only a very short time before the rice is done (13 minutes.) Mine does that too and you get used to it but it is a little odd.

Mine has a very very soft "rice is done" noise; I hope they made it beep a little louder on the Panasonic! Someone commented that the sound is different so I'm hoping. Since it will keep rice warm well it's not the end of the world if you miss the beep, at any rate.

Mine doesn't have a steamer basket and that sounds like a good overall addition. I don't know if I'd use it but it's a nice option. I have used the porridge setting and liked it. I've also cooked rice in broth and coconut milk and had it come out well. (You can make a delicious sweet porridge by replacing some of the water on porridge setting with a can of coconut milk, then adding a little brown sugar at the end when it's done.)

Anyhow both of those look really good, and that brand would be my pick for a replacement rice cooker if I needed one, since mine has worked out so very well.
