Hey you guuuuuys.

I'm looking to kill time doing something slightly more productive, and I'm pretty sure I still love cooking, and everyone always needs food, so give me some of your favorite recipes. EC, I'm looking at you. Recipes for anything: snacks, dinners, desserts. Any level of difficulty, as long as it gives me something to do.

Cornflake Chicken and roasted veggies:

I make this all the time and it's fucking godly.

needed:
2 boneless skinless chicken breasts
Egg Beaters, enough to cover 1/3 bottom of a bowl
Plain non-fat yogurt, about 2 big spoonfuls
about 3 cups or so of cornflakes
Old Bay seasoning
1-2 tablespoons of brown sugar
1/4 cup moist coconut strips (you know, cooking coconut from a bag)
various herbs/spices to taste, mix and match for fun. I use sage and rosemary, and a little thyme
2 teaspoons of salt
lots of pepper.

K so, it's easy:
In food processor or blender, pulse corn flakes until they're in a smaller chunk size, add all of the dry ingredients and continue to pulse until well mixed. Set aside in bowl.

combine yogurt and eggbeaters in a bowl, roll the chicken breasts in the mixture to thougherally coat meat, then roll into cornflake mixture. Set into pan, bake 27 minutes @ 375.

Cut up stir fry veggies, I like onions, carrots, brocolli, green/yellow/red peppers and sugar snap peas. Throw into skillit, medium high heat. Add maybe 2 teaspoons of hot pepper oil (you can find this in an asian market, I'm not sure what it's called, but it's fucking spicy) and stir for 10 minutes as chicken bakes. Don't worry, this hot oil goes a LONG way, you will get a little kick. I had about 2 people worth of veggies cut up.

Plate veggies, plate chicken over veggies. Enjoy spicy/sweet dish.

Sounds good. Don't have a blender, but I'm sure I can manage. As for the spicy oil, yeah, I've tried it. Great for frying veggies in.
