a week ago, pickle:
one red onion sliced into rings 1/2" thick
1 1/2 cups red wine vinegar
1 1/2 cups water
3/4 cup sugar
dried bay
whole black peppercorns
dried chili
cloves
friday, marinate:
pork shoulder cubed 1"
pork belly cubed 1"
pork fat cubed 1/4"
salt
dried bay
black pepper
fresh thyme
clove
tomorrow morning, cook:
one onion, minced
three or four shallots, minced
half bottle or so, cheap white wine (we got ours for two fiddy!)
porky goodness
tomorrow night:
pork rillettes with pickled onions!
