This is a recipe I got from a former coworker and lost. I had wanted to make it a while ago and could not find it anywhere, so I had to scour the internet for something similar. Lo and behold, it was in some random little notebook.
The recipe calls for using a Bundt pan, but if you don't have one (as I'm sure many of you out there in Internetlandia don't), my coworker put the dough in a (or a couple of) loaf pan(s) and it turned out just as good.
1 box dark chocolate cake mix
1 package instant chocolate pudding mix
1 cup sour cream
1/2 cup cooking oil (vegetable, canola, what have you)
1/2 cup warm water
4 eggs
1 1/2 cup chocolate chips (my coworker used mini chips to great effect)
confectioner's sugar for dusting
Combine the cake mix, pudding mix, sour cream, cooking oil, water, and eggs in a large bowl, stirring until thoroughly incorporated. Fold in chocolate chips.
Bake in a greased, floured Bundt pan at 350 degrees for approximately 50-60 minutes, or until a toothpick comes out clean.
Let cool completely, then dust with confectioner's sugar.
This cake, even though it's box mix, is pretty rich and dense. You only need a little to be satisfied. And you're going to want a tall glass of milk to go with, trust me.
