So I've already sent this off in an email to a friend who makes a lot of mead, but I love to get a variety of opinions. So what do you think?
So I made a “3-week” mead. 2.5lbs of clover honey and 8ounces of buckwheat honey, one packet of KV-1116 yeast and a one-gallon carboy with bottled water. Per the directions, I topped off the carboy after 2 days with a honey/water mixture (about .5cup of honey and 2.5cups of water. Racked it into bottles after 2 weeks. But now it’s rather explosive in the bottles (grolsch bottles with the flip top) Making a very loud ‘pop’ when they’re opened, so I’m afraid that they might start exploding. The taste is off too-it’s very fizzy (which I love), but very dry. Is there any way to make it sweeter? I re-racked two smaller bottles into a larger wine bottle and added a bit more honey water-the taste is closer to what I was aiming for. Should I just do this to the rest of it?
