Cranberry Bread (bread machine)

I love the satisfaction of cooking things from scratch but I'm also a junkie for great food appearing after minimal effort as well. Throw the ingredients into the bread machine, add dried cranberries when it beeps, and a few hours later, eat bread! This bread is really tasty toasted the next day as well.

It's been great for me...I love bread but still haven't gathered the gumption (or patience) to make it from scratch.

I'm fond of really good ryes (like pumpernickel) but never liked spending all the time it takes to make a good bread either. :-)

The thing is, if I could be sure the end result would be great bread, I think I'd be willing to invest the time. But since I've mostly heard that there's a learning period where you kinda choke down some beginner loaves, I've been reluctant to start the whole experimenting and learning. But rexhonk keeps posting amazing pictures so I think I'm going to get the itch to bake bread one of these days.

I think I have to wait until I have a bigger kitchen. I am completely out of storage space, counter space, any space at all in there... :(

Same problem here. We put the bread machine on top of the fridge when not in use. Otherwise I'd be tempted to get a stand mixer. I love fantasizing about dream kitchens.

OK, I'm going to try this one in my bread machine.
That's the texture I seem to only get by hand.
That's the texture I want my bread machine to give me everytime.
I'm going to run a test batch with wheat flour before I try it with spelt.

Cool. Hope it works out for you. I like this cranberry bread so much that I haven't gotten around to trying out other recipes. The nice thing about it is that the ingredients area all things I have lying around and nothing perishable so I can leave it in overnight and have the timer make bread for me in the morning.
