A vampire hungers for blood not only as food but as spiritual hunger. Vampires hunger for the blood of their beloved and can only be fully satisfied by that person's blood. Vampires drink each other's blood to share thoughts and emotions. Since Kaname is in love with Yuuki, she's the only one who can satisfy his thirst. He drank Soen Ruka's blood once to make himself forget about Yuuki temporarily but after that he always refused to since her blood and her emotions could no longer satisfy him. It's a much more interesting conception of vampirism than the Cullens.
