And today there was soup!

Guess what I did today! I made me some tasty soup :)

When I was at the market the other day, to my great surprise I found cranberry beans! So I decided to buy some so I could make soup, and also the rest of the ingredients I didn't already have at home. I didn't have the recipe with me, which means I forgot the cilantro and the green/spring onions (so I used instead the bit of a yellow onion that was in the fridge and some shallots and two garlic cloves). And let me tell you, 'twas deliciously awesome and flavourful and wonderful and I'm ever so happy I made a full recipe because now there's a bunch more in the fridge for later :)



From the recipe I expected a fairly subtly flavoured soup, but it ended up being really full-bodied and tasted far better than I expected. (And I thought it would be fairly tasty, so I'm quite pleased). I'm a fan of hearty soups, so I was quite glad that this was chock full of tasty bits, and lots of the beans. I even had to add a bit more of the tomato soup midway and some more at the end because it wasn't quite soupy enough. (This is presumably due to the fact it spent a little over two hours in the oven, or possibly because my measures were all a bit heaped.) I think I'll try the version actually given on the recipe at some point, but I also really like this version, so it was a successful variation-caused-by-forgetfulness.

The soup in my bowl. I might have grated more cheese than I meant to but I blame it on the block not having much left (so I grated it all). And then, of course, I had to use what I had grated or else it would have been wasteful. That's my story and I'm sticking to it!



I've stirred the soup a bit. This shot does a little bit better at showing how awesomely full of stuff the soup is. :)
