Tuna Pasta and Double Chocolate Chunk Cappuccino Cookies

Most of the people who read my blog probably think I eat out all the time, but that's just not true.  Yesterday was cooking-baking day for me.  I'd been wanting to bake cookies for the longest time, but I don't have a mixer here and I'm too lazy to do it by hand, heh-heh.  So yesterday, I finally gave in and bought a hand-mixer so I could satisfy my cookie craving.  My favorite cookie of all time is the Cappuccino Cookie from Cookies by George, a cookie franchise here in Canada.  Sadly, all the Cookies by George locations that I know of have closed and I haven't been able to find a substitute anywhere else.  I've been looking online for a recipe forever but haven't been able to find anything that sounded right.  The closest I found was the Double Chocolate Chunk Cappuccino Cookie from the Baker's Chocolate website.

This didn't turn out quite like the one from Cookies by George, but it tasted okay.  The faint hint of coffee in the cookie made it more sophisticated, which is just perfect for me since I don't like my cookies too sweet.  The chunks of melted chocolate in the cookie and the crunch of walnut pieces were like a party in my mouth, and the chewiness-crunchiness ratio was just right for my taste.    I ended up giving some  to

After all that baking, I got hungry and decided to make some pasta.  Baking is hard work, you know!  :)  Actually, I just wanted something to distract me from eating all those freshly baked cookies.   Since it was so late, I didn't have time to defrost any meat so I decided to make  some tuna pasta.  I had a pack of whole wheat spaghetti in my cupboards, and I always have olive oil and garlic on hand, so I knew making the pasta would be a snap.  No measurements needed.   While the spaghetti was boiling, I prepared the sauce.  Some olive oil in a pan, 3 tablespoons of chopped garlic (I looove garlic!), some basil and cayenne pepper, tossed with canned tuna flakes and grated parmesan cheese, and then combined with the finished pasta, and dinner was ready!  I also found some leftover white wine in the fridge, so we had a really good dinner. :)  Yes, you read me right.  I had leftover wine.  Isn't that such a waste?  I bought it primarily for cooking but I bought a drinkable wine for just such an occasion as this one.  After all, I can never finish a bottle of white wine just for cooking, and I don't really want to drink leftover cooking wine.  Anyway, the leftover wine went perfectly with the pasta so I'm glad I had it on hand.  It temporarily satusfied my wine craving.
