What I eat.
People seem to care now that I'm losing weight.
no one ever asked while I was packing on the pounds, but now they want to know.
And Steve Dekat is the most persistent of them.
I think he and Kim may have too much stock in how much Karate is affecting my weight loss and not enough on the impact healthy eating has had on my weight loss. I told him that being mindful of healthful eating and that reading (and paying attention to) the Eat This, Not That series, and The 150 Healthiest Foods on Earth had done a lot for me, but that's not good enough for Steve. He needs to know WHAT I EAT.
Listen Steve, it's not about what I eat. It's about finding what will work for you, because I am pretty certain that for the most part you wouldn't stick with a diet made of the foods I eat. You need to set up some guidelines for healthful eating and find the foods YOU want that work well inside those guidelines.
that being said.
Here is some of what I've been eating while I lost the last 100 lbs.
Eat Breakfast every day. Don't skip it. Breakfast wakes up your digestive system, increasing your daily metabolism.
A few of the things I eat for breakfast.
2 cups of blueberries folded into 1/2 cup of plain, live and active yogurt.
Get a skillet hot add 1/4 cup of water and 3 cups of spinach leaves, salt and cover with lid. Put both halves of a thinbun into one toaster slot with the insides facing out set on a dark setting. Uncover spinach and drain pan, scramble 2 eggs and cook. Make sandwich of scrambled eggs, wilted spinach and toasted thinbun.
3 cleaned carrots.
An apple.
Lunch and dinner are interchangeable, if I eat it for one, I might eat it at the other. I eat out a lot.
Wendy's - Baked potato with no sour cream or butter and a large chili (with hot sauce) poured over the top.
Wendy's - Ultimate Chicken Grill combo with Lrg Ice Tea and small chili w/ hot sauce (instead of fries)
Chipotle - Bowl. No Rice. Fajita veggies, any of the meats (usually chicken) All of the salsas, no cheese or sour cream, add guacamole and romaine, then chipotle Tabasco.
Red Lobster - No more than 2 Cheddar bay biscuits, house salad with red-wine vinaigrette, in-season grilled fish, side of veggies, side of baked potato topped with Pico de Gallo.

Homemade vegetable soup - Michele makes this, it's different every time made - from whatever we have, but is pretty much guaranteed to be better for you than canned soup.
chicken sandwich - 1 can of Kirkland chunk chicken breast, drained and nuked for about 30 seconds put on thinbuns (often toasted). Sometimes with mustard or hot-sauce. Usually with a can of low sodium V8.
