I know that the back-end supports it; it's IMAP for the most part -- and those parts that aren't IMAP-compliant are all 'Tags vs. Folders'-related.
I haven't tried to bounce anything using Thunderbird since I'm using TB-3 and there simply isn't an option (the plugin that handled redirects with TB-2 isn't compatible with TB3).
I know that GMail will indeed bounce/redirect if the client supports it. The trick is finding a front-end client: Most of the graphical ones don't (although I believe 'Mulberry' does, but I haven't used it).
The webmail interface for Fastmail.FM *used* to support bounce/redirects, and I hear-tell that if you use their 'legacy' webpage, it's still there, but you gotta go digging to find it; the current page doesn't have a button for bounce/redirects.
These are the only two IMAP services I've worked with (every other 'free' mail service offers POP -- Gee, I wonder why!), and both support bounce if you know enough to use a client that uses it.
"Mulberry" might be what you're looking for if you want a GUI. Thunderbird might be, too, once the plug-in gets updated. I have not investigated Opera Mail, The Bat!, Claws, or Pegasus.
Alpine is -- well, you might find you like Alpine, if text is your thing.
